This easy weeknight dinner is calling your name. Low maintenance and absolutely delicious-- what more can we ask for?

Ingredients:
2 salmon fillets
1/3 cup Sylvia's Cookin', Dippin', Moppin' sauce
Sylvia's Pure Black Pepper
salt
parsley, chopped for garnish
2 zucchinis, sliced
8 oz broccolini
1 tbsp olive oil
1 tbsp balsamic vinegar
1 tsp Sylvia's Rib Rub n' More seasoning
Directions:
- Preheat oven to 400-degrees F. Line a large baking sheet with baking parchment.
- Toss broccolini and sliced zucchini with olive oil, balsamic vinegar and the seasoning. Spread in a single layer on lined baking sheet. Roast in oven for 10 minutes. Then place together with salmon and cook for another 10-14 minutes or until done.
- Place salmon fillets on a sheet of foil. Wrap the ends of the foil and pour the sauce over the salmon. Fold the sides of the foil over the fish, covering completely. Seal the packets closed so the sauce doesn't leak. Place onto a baking pan and place into the oven. Bake until cooked through, about 12-14 minutes. The cooking time depends on the thickness of the salmon fillet. Open the foil, and broil for 2 minutes. Be careful not to burn it!
- Remove both veggies and salmon from the oven. Pour some of the sauce left in the foil onto the salmon before serving. Garnish with chopped parsley.
